GRATUITY
OUR BREAD
An automatic service charge of 20% is added to all dine in checks, and 15% to all take-out orders. You are welcome to add additional gratuity, but it is not expected.
Our bread is uniquely delicious because it’s crafted with a naturally leavened sourdough starter, alive for over a decade, imparting deep, complex flavors. The dough, made with a 100% hydration ratio—equal parts flour and water—creates a perfectly balanced texture. Enriched with high fat for a silky, chewy bite and a touch of sugar for subtle sweetness, it ferments up to three days in our walk-in cooler, enhancing its tangy depth. We skip bread proofers, letting the dough naturally proof at ambient temperature for optimal flavor development. Each morning, we portion and bake it fresh, ensuring unmatched quality and freshness in every loaf.
